About this calculator

Coffee extraction yield measures what percentage of the ground coffee's mass actually dissolved into your cup, calculated from Total Dissolved Solids (TDS, measured with a refractometer): Extraction % = (TDS × brewed weight) / dose weight. The widely used “Coffee Brewing Control Chart” from the SCA (Specialty Coffee Association) puts the ideal extraction window at roughly 18-22%, with strength (TDS) typically targeted around 1.15-1.35% for filter coffee.

Under-extraction (below 18%) tastes sour and underdeveloped because desirable acids and sugars haven't fully dissolved yet, while over-extraction (above 22%) pulls out bitter, astringent compounds from the coffee grounds — baristas and home brewers adjust grind size, brew time, water temperature and dose-to-water ratio to steer both numbers into the target range.
