About this calculator

Traditional high-sugar jam relies on a roughly 1:1 ratio of sugar to fruit by weight — the sugar isn't just for sweetness but works with pectin (naturally present in the fruit or added separately) to set the gel and, combined with the low water activity it creates, helps preserve the jam without refrigeration once sealed. Lower-sugar recipes typically use ratios closer to 2:1 or 3:1 fruit to sugar but need added pectin formulated for reduced sugar to still set properly.
