About this calculator
Meringue sugar ratios differ by technique: French meringue (raw egg whites whipped with sugar added gradually) typically uses about 50g of sugar per egg white — roughly a 2:1 ratio of sugar to egg white by weight. Swiss meringue (egg whites and sugar warmed together over a bain-marie before whipping) uses a similar ratio but the heating step dissolves the sugar fully and pasteurizes the whites, producing a denser, glossier result. Italian meringue (a hot sugar syrup cooked to soft-ball stage, around 115-120°C, then streamed into whipping whites) uses roughly the same sugar-to-white ratio but is the most stable of the three because the cooked syrup partially cooks the egg whites as it's incorporated.
Bakers choose between these three methods based on what the meringue is for: French is fastest and best for baked meringue shells or folding into batters, Swiss is prized for buttercream because of its silky, fully dissolved texture, and Italian is the most stable and heat-tolerant, making it the standard choice for topping a pie that needs to be torched or briefly baked without weeping.
