About this calculator
Chaptalization is the practice of adding sugar to grape must before or during fermentation to raise the final alcohol by volume (ABV) of wine, used when grapes haven’t reached enough natural sugar (and therefore potential alcohol) due to a cool climate or an early harvest. As a rule of thumb, roughly 17-18 grams of sugar per liter of must raises the eventual ABV by about 1%, since yeast converts sugar to alcohol at a fairly consistent ratio.
Winemakers in cooler regions — traditionally in parts of France, Germany and other northern wine regions — use chaptalization to reach a target ABV and body when the vintage’s natural sugar falls short, though the practice is tightly regulated or banned outright in warmer regions and specific appellations where it’s considered unnecessary or against tradition. Homebrewers making country wines and meads use the same math to hit a target strength.
